Associated with Mothering Sunday and Easter is the Simnel cake.
In the past, young girls in service would make one to be taken home to their mothers on their day off.
A Simnel cake is a fruit cake with two layers of almond paste or marzipan, one in the middle and one on top which is toasted.
All butter fruit cake delicately spiced with a rich layer of marzipan inside and toasted marzipan on top. Packed with currants and sultanas, and lightly flavoured with cinnamon and nutmeg.
Ingredients:
Marzipan (37%) (almonds, sugar, water)
Vine fruits (25%) (currants, sultanas),
Citrus peel (glucose-fructose syrup, orange peel, invert sugar syrup, lemon peel, citric acid),
Cherries in glucose syrup
Butter,
Free Range Egg,
Wheat Flour,
Muscavodo Sugar,
Apricot jam (glucose syrup, apricot puree, sugar)

Store in a cool dry place, once opened store in an airtight container
